It is cold smoked in a low smoke temperature of up to 24°C. The duration of such a process is several hours for sausages and several days for hams. It is worth waiting, however, because you will end up with a long-lasting product that can be stored for several months.All work must be carried out with breaks, the generator must be started as described in the recipe, but usually for 2 hours in the morning and 2 hours in the evening. The maximum temperature for heating the generator is 40 ° C. The ZW-01 accessory reduces this temperature according to the needs of cold smoking. This element is fixed to the generator and then connected to the chamber with a spiro tube. The length of the smoke diffuser cable should be within 1.2-2 metres. The installation of the whole structure is quick and easy, stable and clean during use.
