The perfect complement to the basic Borniak 70 smokehouse kit is the enriched ZS-70 accessory kit, which includes a number of important items in addition to the standard smokehouse cabinet, smoke generator and the usual number of shelves and hooks. This allows for convenient preparation of meat and fish over a wide temperature spectrum, depending on the recipe. When cold, it is smoked at low temperatures of up to 24°C. Such effects can be achieved thanks to the Alu-Cink - ZW-01 cold smoking attachment. In this process, the smoke circulates only slightly around the meat. The duration of such smoking is several hours for sausages and several days for hams. It is worth waiting, however, because in the end you will get a very refined taste and long-lasting products that can be stored for several months. The smoke generator heating can heat the appliance up to 40°C. The fixation allows the temperature to be reduced to cold smoking conditions, resulting in a chamber temperature only 2 degrees higher than the atmospheric temperature. Attach the attachment to the generator and connect it to the chamber with a spiral pipe. The length of the smoke barrier cable should be in the range of 1.2 - 2 m. The enclosure provides great protection for the smoking area against leaves, dust, snow, freezing rain or bird droppings. Thanks to this, the fish is perfectly smoked from all sides. The sausage net is used for the convenient preparation of future smoked sausages. It will also protect it from falling apart during smoking. It is a perfect substitute for traditional boring and self-stringing meats. This net is also suitable for cheese making. You can easily remove it from smoked products.
